If you are looking for a simple, yet comforting dish, Ochazuke is a great idea. Ochazuke is a simple one-bowl dish featuring steamed rice with an assortment of savoury ingredients, partially steeped in green tea. It's highly versatile. You can use leftover rice, hot tea or even cold tea. A perfect dish all year round!
Ingredients:
The Rice
1 cup Japanese short-grain rice
1 1/3 cup water
1/2 tbsp dashi powder
1 tsp mirin
1/2 tsp salt
The Green Tea
2 tsp Japanese green tea leaves
1 cup hot water
Assemble
Hardy Smoked Masterpieces Smoked Eel (sliced)
2 tbsp edamame (cooked)
1-2 tbsp furikake
a handful of scallions (thinly sliced)
Bonito flakes
Japanese pickled ginger
wasabi (optional, for taste)
Step:
The Rice
1. Wash the rice and rinse well. Repeat until the water runs clear.
2. Put rice into a pot with lid (or rice cooker). Add water and all seasonings. Cover lid and cook on medium-high heat for 10 minutes. Then turn the heat down to low and keep simmering until the rice is cooked through. Set aside for later use.
The Green Tea
1. Put tea leaves in a tea pot. Bring water to a boil, and pour it into the pot. Set aside for a few minutes.
Assemble
1. Put rice into a bowl. Place eel on top. Sprinkle edamame, furikake, scallion and bonito flakes. Garnish with pickled ginger.
2. Pour the tea into the bowl. Then serve.
