【Quick and Easy】Tuna Poké Salad Bowl

We've only visited a Japanese restaurant once in the 3 years since we arrived in Porto. The more affordable ones serve inauthentic food, while the real deals are bank-breaking. One day, a friend told me that sashimi-grade frozen tuna was available in a specific supermarket. I immediately went to grab a bag so I could make a poké salad bowl. It's high in protein, low in carbs, and full of flavours. The best part is...it can be done in 15 minutes and doesn't require any cooking at all!


Tuna Poké Salad Bowl

Ingredients:

(for 2 bowls)


1/2 lemon (juiced)

1 small avocado (diced)

350g sushi-grade tuna (diced)

2 tbsp edamame (cooked and de-shelled)

2 bowls of leafy green of your choice

1/4 small red onion (thinly sliced)

a handful of Chuka wakame

a handful of furikake (for garnish)


Ginger soy marinade

1/2 tsp ginger (grated)

2 tbsp soy sauce

1/2 tbsp chilli oil or sesame oil

a pinch of table salt


Tuna Poké Salad Bowl

Step:


1. In a medium bowl, mix lemon juice and avocado together (prevents the avocado from turning brown).


2. Add tuna, edamame and the ginger soy marinade ingredients. Stir well.


3. Put leafy greens on the bottom of two serving bowls. Sprinkle sliced red onions and Chuka wakame into each bowl. Place the seasoned avocado, tuna and edamame on top.


4. Garnish with furikake. Serve.


You can experiment with different ingredients and dressings. For example, you might try a Sriracha Mayo version (replacing the ginger soy marinade with Sriracha and Kewpie mayonnaise). Additionally, you can substitute the leafy greens with cooked sushi rice (if you prefer a more filling meal).
