Korean Pork Ribs in KFC Sauce

Don't get me wrong, I'll never get bored of KFC (Korean Fried Chicken). However, sometimes it's nice to take a pause from chicken and sample other proteins. So I came up with this pork rib recipe that has the same flavour, yet a different taste. They are finger-licking good!


Korean Pork Ribs in KFC Sauce

Ingredients:


12 pieces of pork rib

1 tbsp soy sauce

2 tsp sugar

2 tsp Chinese wine

1/2 tsp ginger (grated)

1/4 tsp ground white pepper

1/4 - 1/3 cup corn starch

1/4 cup olive oil

a pinch of white sesame (optional, for garnish)

a handful of chopped spring onion (optional, for garnish)


Sweet Chilli Sauce

3 tbsp tomato sauce

2 tbsp Gochujang (Korean chilli paste)

2 tbsp honey

2 tbsp brown sugar

1 tsp soy sauce

2 tbsp garlic (minced)

1 tbsp sesame oil


Steps:


Sweet Chilli Sauce

1. Add all ingredients into a pan. Cook over medium-low heat. Stir occasionally. Once it starts bubbling, remove from heat for later use.

Ribs

1. Marinate ribs with soy sauce, sugar, wine, ginger and white pepper for at least 30 minutes.


2. Coat the ribs with a thin layer of corn starch. Remove excess.


3. Heat oil in a pan over medium-high heat. Pan-fry the ribs for 4 - 5 minutes, then flip and cook for another 4 - 5 minutes, or until they are cooked through. Work in batches if necessary.


4. Put the ribs into a large mixing bowl. Pour in the sauce and gently mix together. Make sure each rib is coated with sauce.


5. Dish up. Sprinkle sesame and spring onion on top. Then serve.


Feel free to adjust the amount of Gochujang and sugar to achieve the savoury, spicy and sweet balance of the sauce.
