【My Twisted Recipe】Birthday Lamingtons

A birthday cake is the perfect gift for someone's birthday. But it might be a pain in the ass for them to carry it around. Mini cakes are the solution! Enter the Lamington. However, the traditional black and white colour doesn't seem bright enough for birthdays, so I decided to play with the coating. I replaced the usual black chocolate coating with white chocolate, and added a lot of confetti! Now they scream "birthday" to me!


To make the icing-dipping process easier, it's better to bake the sponge cake a day ahead. Once the sponge cake is completely cool, wrap it with cling wrap and keep covered overnight.


Ingredients:


2 sheets of sponge cake (see recipe here)

3 cups frozen mixed berries

1 1/2 cup sugar

1tbsp lemon juice

1 cup milk

2 cups white or milk chocolate (chopped)

2 1/2 cups icing sugar (sifted)

3 cups shredded coconut

1 cup confetti





Steps:


1. First, make the berry jam. Place the berries and sugar into a pan. Bring to a boil over medium heat. Add lemon juice and reduce the heat to medium-low. Let it simmer about 20-30 minutes until it thickens slightly. Remove from heat and pour into a clean glass jar to cool completely.

2. Second, make the icing. In a pan, melt white or milk chocolate with milk over low heat. Once the chocolate is completely melted, remove it from the heat and mix in icing sugar until smooth.


3. Cut sponge cake sheets into 1.5 x 1.5 inch small squares. Smear berry jam in between the two sponge cake layers.


4. Dip the cake cubes into the chocolate icing with a wooden skewer. Make sure that they are completely coated on every side.


5. Drain the excess icing off. Then roll them on a plate with shredded coconut and confetti.


6. Place the cake cubes on a cooling rack to let the icing set.
