Suddenly craving for something sweet? These oat cookies are something you can easily whip up in 30 minutes.
Ingredients:
*makes 12 cookies*
8 tbs butter (at room temperature)
1/3 cup light brown sugar (tightly packed)
3 tbs sugar
1 egg yolk (at room temperature)
1/2 cup all purpose flour
1 1/2 cups old-fashioned rolled oats
1/8 tsp baking powder
a tiny little pinch of baking soda
1/2 tsp fine sea salt
1/4 cup raisins
1/4 cup walnuts (roughly chopped)
Steps:
1. Heat the oven to 175°C.
2. Combine butter and sugars in a stand mixer bowl fitted with a paddle attachment. Beat on medium-high speed for 2 - 3 minutes, or until the mixture colour turns a bit pale.
3. Scrape down the sides of the bowl. Add egg yolk and beat on medium-high speed for 1 - 2 minutes, until the sugar granules fully dissolve and the mixture is a pale white colour.
4. Reduce speed to low. Add flour, oats, baking powder, baking soda, salt, raisins and walnuts. Mix for 1 minute just until the dough comes together.
5. Use an ice cream scoop or spoon, portion out the dough onto a parchment-lined sheet pan. Leave at least an inch of space between each other. Pat the tops of the cookie dough domes flat.
6. Bake for 15 - 18 minutes, or until they are browned on the edges and just beginning to brown toward the centre. Cool completely on a wire rack before serving.
If you are not using a mixer, it'll take longer to beat the butter and sugar. Make sure the mixture turns pale in colour, which means that they are properly creamed.
