【One Pot Wonder】Korean Spicy Pork and Cabbage Stew

One pot + two main ingredients + less than 30 minutes = full of flavour!!! Sounds too good to be true? Check out this Korean spicy pork and cabbage stew recipe.

You can adjust the spiciness by adding more bird's eye chilli into the sauce, or none at all!
Ingredients:
Spicy sauce
1/2 yellow onion (roughly chopped)
3 cloves of garlic (roughly chopped)
2 small bird's eye chilli (roughly chopped)
2 tbsp Gochujang
2 tbsp soy sauce
3 tbsp mirin
1 tbsp sesame oil
1/2 cup water
The stew
2 tbsp olive oil
400g pork (thinly sliced)
1/2 yellow onion (julienned)
1/2 small cabbage (julienned)
2 cloves of garlic (sliced)
a pinch of bird's eye chilli (sliced), spring onion (chopped) and sesame (for garnish)
lettuce leaves (for serving. optional)

Steps:
Spicy sauce
1. Mix all the ingredients in the blender. Set aside for later use.
The stew
1. Heat oil in a pan over medium high heat. Add garlic and onion. Stir-fry for 1-2 minutes.
2. Add cabbage. Cook for 2-3 minutes until it starts to get soft.
3. Add pork and stir-fry for 2-3 minutes.
4. Pour the spicy sauce in and mix well. Turn the heat down to low and cook for 10 minutes.
5. Turn off the heat. Sprinkle the chilli, sesame and spring onion on top. Then serve in lettuce wraps.
