【One Pot Wonder】Chilli with Cornbread

Chilli is one of our favourite one pot wonders. I have made different versions with beef, Beyond Meat and even just vegetables. This time I changed things up by using ground turkey topped with a layer of sweet cornbread to make it more delicious!

This chilli recipe is super flexible when it comes to ingredients and seasonings. You can use different meat, vegetables, and play with the seasonings to suit your taste. If you prefer your chilli spicy like I do, feel free to add spicy chilli powder to give it an extra kick.
Ingredients:
Chilli
2-3 tbsp olive oil
500 g ground turkey
1 small onion (diced)
1 green bell pepper (diced)
1 red bell pepper (diced)
2 small carrots (diced)
1 canned tomato (with juice)
1-2 cup vegetable stock
2 tbsp chilli powder
2 tbsp smoked paprika
1 tbsp dried oregano
1 bay leaf
1/2 tbsp Worcestershire sauce
1/2 tbsp Tabasco sauce (optional)
few jalapeños (optional)
salt and pepper to taste
Cornbread
1/2 cup all purpose flour
1/2 cup cornmeal
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 egg
1/3 cup milk
2 tbsp olive oil
a handful of shredded cheese


Steps:
Chilli
1. Heat oil in a cast iron pan over medium high heat. Add turkey and cook for 2-3 minutes. Keep stirring as it tends to stick easily.
2. Add onion, bell peppers and carrot. Cook and stir for around 5 minutes.
3. Mash tomatoes with hands, then pour it in (together with the juice). Add 1 cup of stock and all of the seasonings. Cook for another 5 minutes.
4. Turn the heat down to low. Let it simmer and reduce for at least 30 minutes. Stir occasionally (add more stock if needed).
Cornbread
1. Mix flour, cornmeal, sugar, baking powder and salt together.
2. Whisk egg, milk and oil. Then slowly whisk the mixtures into the dry ingredients. Mix until there's no lumps.
to assemble
1. Heat oven to 200°C.
2. Evenly spread the cornbread batter on top of the chilli. Sprinkle cheese on top.
3. Bake for 15–20 minutes until golden brown. Then serve.
