Pesto Swirl Whole Wheat Sandwich Bread

A sandwich is always a quick, easy and nice lunch idea. We never get bored of it because, not only do we play with the fillings, but we also play with the bread itself! Adding pesto into this bread gives it extra fragrance, freshness and savouriness, making it delicious solely on its own.

You can be creative by replacing pesto with other spreads or jams to create new flavour profiles. You can even take the sweet route!
Ingredients:
3/4 cup lukewarm milk
2 tbsp water
3 tbsp unsalted butter (softened at room temperature)
1 large egg
2 1/4 cups all purpose flour
1 cup whole wheat flour
2 tbsp active dry yeast
1 tsp salt
1/4 - 1/2 cup pesto sauce
1/4 - 1/3 cup grated parmesan (optional)
few fresh basil leaves (optional)


Steps:
1. Combine milk, water, butter, egg, flours, yeast and salt. Mix and knead for 8 minutes (by mixer) to 10 minutes (by hands) until the dough is soft and non-sticky.
2. Cover and let rise for 1 hour or until doubled.
3. After its first rise, roll the dough into an 8 x 18 inch rectangle. Spread pesto evenly, leaving 1 inch at the top edge uncovered. Sprinkle on grated parmesan and fresh basil leaves if you like.
4. Roll the bread up from the bottom toward the top. Pinch the seam closed.
5. Place seam-side down in a greased 9 x 5 inch loaf pan. Cover and let the dough rise for 30 - 45 minutes. While the dough is rising, preheat the oven to 180°C.
5. Bake for 40 - 45 minutes. Take the bread from the oven. Remove from pan and let cool completely before slicing.
