Cheap and delicious street food is one of the reasons why we love Southeast Asia so much. We can eat street food anytime of the day, and all day, every day! Meat skewers are actually one of the street foods you can easily make at home. Paired with a rich and nutty satay sauce, you just can't go wrong!
Ingredients:
Pork skewers
400 g pork (thinly sliced)
2 tbsp lemongrass (finely chopped)
2 tbsp shallot (finely chopped)
1 tbsp garlic paste
1 tsp ground cinnamon
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric powder
2 tbsp fish sauce
2 tbsp coconut sugar or brown sugar
1/2 tbsp sesame oil
some cucumber slices
Satay sauce
1/2 tbsp oil
50 g Massaman curry paste
250 g coconut milk
50 g palm sugar
1 tbsp tamarind paste
1/2 tbsp peanut butter
50 g peanut (roasted and roughly chopped)
Steps:
Satay sauce
1. Heat oil in a pan. Add curry paste and stir-fry over medium low heat for 1 to 2 minutes.
2. Pour coconut milk in batches and keep stirring until the mixture is homogenous.
3. Add palm sugar, tamarind paste, peanut butter and stir well. Turn the heat down to low and simmer for 2 to 3 minutes. Stir occasionally.
4. Add peanuts and cook for around 3 minutes or until it thickens. Adjust the taste before dishing up for later use.
Pork skewers
1. Marinate pork in all of the seasonings for at least 30 minutes.
2. Wet bamboo skewers. Then thread the meat onto the skewers.
3. Heat oil in a grill pan over medium-high heat. Grill for 2 minutes. Then flip and grill for another 1 or 2 minutes.
4. Dish up and serve with sliced cucumber and satay sauce.
If you don't have a grill pan, you can place the pork skewers on a grill rack in an oven. Grill at 200℃ for 5 minutes or until they cooked through.
