【Quick and Easy】Thai Squid Salad

Thai green papaya salad is one of our go-to salads. However, it seems like there's no green papaya here, so I found a great alternative which became our new favourite dish...Thai squid salad. Unfortunately, I couldn't get my hands on glass noodles, but if I do, I'll add it into the dish to make it even more authentic.

Thai Squid Salad

Ingredients:


Sauce

2 - 4 small bird's eye chilli

1 - 2 lime (just the juice)

1 shallot

3 cloves of garlic

a handful of cilantro

2 tsp coconut sugar

1 tbsp fish sauce

1 tbsp water


Assemble

1 small squid (cut into small pieces)

1 slice of ginger

1 tomato (julienned)

1/2 red onion (julienned)

1 stalk celery (julienned)

1/2 cucumber (julienned)

a handful of cilantro (roughly chopped)



Steps:


Sauce

1. Put all ingredients into a blender and blend well. Set aside the sauce for later use.


Assemble

1. Heat water with the ginger in a pan over medium-high heat. When it boils, add squid into the water and blanch around 2 - 3 minutes.


2. Remove the squid and place them into ice water immediately. Drain well.


3. Put all ingredients onto a plate. Pour the sauce. Mix well and serve.


If you are using fresh squid (I used frozen), this is how you prep it: wash thoroughly and remove the skin. Then cut into small pieces and score shallow diagonal cuts in a crisscross pattern on the surface.
