We love fruit, but sometimes we forget to have a least one a day. So, I often mix them into salads to help ensure that we eat our fruit. Apart from apples and pears, oranges are also a good option for salads, as they brighten up the whole dish. Together with creamy avocado and crunchy lettuce, you can have a healthy and delicious salad in less than 15 minutes!
Feel free to find your preferred sweet/tangy balance of the dressing by adjusting the amount of orange and lemon juice.
Ingredients:
Dressing
2 tbsp olive oil
2 tbsp orange juice
2 tbsp lemon juice
1 tbsp Dijon mustard with grains
a pinch of salt, oregano and red chili flakes
Assemble
3 cups arugula or any leafy greens
1 avocado (sliced)
1 orange (diced)
1 shallot (thinly sliced)
1/4 cup cashews (roasted)
a pinch of red chili flakes (optional)
a small handful of feta cheese (optional)
Steps:
Dressing
1. Mix all ingredients in a bowl. Whisk to blend together until the dressing is thick and emulsified.
Assemble
1. Place the greens, avocado and orange into a big salad bowl, followed by shallot and cashew.
2. Sprinkle chili flakes on top. Drizzle as much dressing as you like. Then serve.
