【Quick and Easy】Tom Yum fried rice

We don't cook rice so often. When we do, we tend to cook a bit more so we'll have some leftover for later use. I like to refrigerate the rice overnight. That's my secret weapon for a perfect fried rice!


Tom Yum fried rice

The sky is the limit when it comes to fried rice. You can play with different ingredients (including whatever leftovers you have in the fridge) and seasonings to create your own signature fried rice.

Ingredients:


1 shallot

200g shrimp or prawns

2 bowls of cooked jasmine rice (overnight rice preferred)

1 tomato

1 bird's eye chili (optional)

1 tbsp Tom Yum paste

2 tsp olive oil

a pinch of salt

chopped coriander and mint (for garnish)



Steps:


1. Heat oil in a wok or pan over medium high heat. Put shallot in and sauté for 1 minute.


2. Add shrimp and sauté for 1 minute. Then add in tomato and stir-fry for 1-2 minutes.


3. Add rice and keep stirring for 2-3 minutes to make sure that there are no lumps.


4. Add birds eye chili (optional) and Tom Yum paste. Season with salt. Keep stir-frying until everything mixed well.


5. Garnish with chopped coriander or mint. Then serve.
