Sloppy Joe

After more than a month of self-quarantine absolutely PACKED with cooking and baking, I just didn't feel like making a fancy "Sandwich of the Month". The Sloppy Joe is a no-brainer.

This typically American sandwich is includes a meat sauce comprised mainly of ground beef and ketchup. For this sandwich, I used some leftover Mexican chilli in the fridge (it tastes pretty much the same, and I was feeling SLOPPY!). However, if you prefer the authentic version, stick to the ingredients below.

We like it nice and SLOPPY!

Ingredients:

*makes 2 sandwiches*

Meat sauce

1 tsp extra-virgin olive oil

1/2 green bell pepper (diced)

1/2 yellow onion (chopped)

350 g ground beef

1 garlic clove (minced)

1/4 cup ketchup/tomato sauce

1 tsp tomato paste

1 tsp Worcestershire sauce

1 tsp brown sugar

1/2 tsp yellow mustard

1/4 tsp chilli powder

1/4 cup water

A pinch of salt and ground black pepper

To assemble

2 burger buns

2 slices of cheddar cheese (optional)

Pickles and chips (optional)

Steps:

Meat sauce

1. In a large skillet, heat oil over medium-high heat. Add bell pepper, onion, carrot and cook for around 5 minutes.

2. Add ground beef and stir-fry until it's golden brown.

3. Add garlic, ketchup, tomato paste, Worcestershire sauce, brown sugar, mustard, chilli powder and water. Stir to combine and cook for about 5 minutes.

4. Season with salt and pepper. Simmer for around 15 minutes, or until the sauce has thickened.

Assemble

1. Cut the buns in half and toast with butter.

2. Pour the sauce on the buns. Then place a slice of cheese on top. Serve with side pickles and chips.

This meat sauce is quite versatile. You can also use what's leftover to make pasta dishes.
