Tuna Salad Sandwich

Since arriving in this land of canned fish, we always make sure to keep them stocked in our pantry. Don't feel like cooking too much and yet wanna have a nice brunch or lunch? Just put together a can of Portuguese tuna with a few ingredients, paired with my deluxe sandwich bread, and you'll have this delicious American classic sandwich in under 30 minutes.

Place the tuna salad in between two layers of lettuce help to prevent the bread from getting soggy. You can replace the lettuce with any kind of leafy greens or cucumber as you like.
Ingredients:
2 can of tuna in salt water
1/4 cup red onion (finely chopped)
a handful of pickles (finely chopped)
1 tbsp lemon juice
2 tbsp mayonnaise
1 tbsp Dijon mustard
a pinch of salt and pepper
2 slices of deluxe sandwich bread
lettuce (optional)

Steps:
1. Mix all the ingredients (except lettuce and bread) in a bowl.
2. Slightly toast the bread with a bit of butter until golden brown (optional).
3. Place a layer of lettuce on top, then the tuna salad, another layer of lettuce and toast. Cut it in half and serve.
