Everybody loves French fries. For me, it's one of those "can't stop, won't stop" foods. Why? Why is it so irresistible? It's a perfect combination of fat and carbohydrates that combine to create a “supra-additive effect” in our brains, which gets us hooked. Baked zucchini "fries" is a much healthier alternative. Warning: it's addictive as well!
Work in batches or even piece by piece when dipping zucchini strips into eggs or rolling them in bread crumbs, to ensure they are evenly coated.
Ingredients:
2 zucchinis (cut into 2-inch strips) 2 eggs (beaten) 1/2 cup bread crumbs 1/4 cup grated Parmesan cheese Cooking spray or a dash of olive oil
A handful of grated Parmesan cheese and chopped parsley (optional for garnish)
Steps:
1. Preheat oven to 220°C. Line a large baking pan with parchment paper covered with cooking spray or a thin layer of olive oil.
2. In a mixing bowl, mix bread crumbs and Parmesan cheese.
3. Dip zucchini strips into beaten eggs, shake to remove excess.
4. Roll zucchini strips in bread crumb mixture to coat. Then lay them in the pan.
5. Bake for 15 minutes. Turn over, and bake for another 5-10 minutes until golden and crisp.
6. Garnish with grated Parmesan cheese and chopped parsley. Then serve.
