Now that we have homemade kimchi, what to do with it next? This kimchi and pork stir-fry is one of our go-to dishes. Pair it with a bowl of rice, and Oh! What a satisfying meal.
I prefer using pork tenderloin slices as they have lower fat content. If calories aren't a concern, you could go with fattier parts like pork belly or pork neck.
Ingredients:
300g pork slices
1 small cabbage (roughly chopped)
100g homemade kimchi
100g onion (julienned)
50g carrot (julienned)
1 tbsp olive oil
1 garlic clove (minced)
1 ginger slice (minced)
3 tbsp kimchi base
2 tbsp Gochujang
1 tsp soy sauce
1 tsp sesame oil
a pinch of green onion (chopped for garnish)
a pinch of sesame (for garnish)
Marinade
1 tsp mirin
1 tsp soy sauce
a pinch of white pepper
Steps:
1. Cut pork into pieces around 2-inch wide. Marinate in seasonings for 5-10 minutes.
2. Heat olive oil with medium high heat in a pan. When it's hot, add in garlic and ginger.
3. Add pork and stir for 2-3 minutes.
4. Add onion, carrot, cabbage and kimchi. Then pour in kimchi base, Gochujang and soy sauce. Stir for 3-5 minutes.
5. Drizzle sesame oil on top. Turn off the heat and plate it.
6. Sprinkle green onion and sesame on top. Then serve.
