During summer months, here's always a fresh, juicy watermelon in our fridge. It's sweet, it's succulent, it's refreshing...we just can't have enough! Usually we just eat it straight, but since we had feta and basil in the house, I decided to make this super simple salad to change things up.
If you want to make this salad extra refreshing, try refrigerating the watermelon beforehand and replace teh basil with mint.
Ingredients:
3 cup watermelon (deseeded)
1/4 cup feta cheese (crumbled)
2 cup arugula
1/4 cup basil (chopped)
1/4 cup olive oil
1 lime
1/2 tsp salt
1/2 tsp black pepper (grounded)
Steps:
1. Cut watermelon into 1 inch chunks and the drain excess juice with a colander.
2. Whisk together olive oil, lime juice, salt and black pepper in a small bowl.
3. Place arugula in a large salad bowl. Add in watermelon, feta and basil.
4. Pour the olive oil lime dressing on top, then serve.
