Lately I have been craving for KFC chicken. I could've ordered delivery, but it would probably take forever to arrive at my door, and probably be soggy by the time it does. So I found a copycat recipe online, and made a healthier version by baking instead.
We all know that KFC uses a blend of 11 herbs and spices for their chicken. So, unless you have a full pantry with a wide range of seasonings like I do, if not, it might be a better idea to just order in.
Ingredients:
2 pieces chicken breast (cut into stripes)
1 cup buttermilk
1 tbsp fine salt
1 egg (beaten)
Coating
2 cup all purpose flour
2/3 tablespoon salt
1/2 tablespoon thyme
1/2 tablespoon basil
1/3 tablespoon oregano
1 tablespoon celery salt
1 tablespoon black pepper
1 tablespoon dried mustard
4 tablespoons paprika
2 tablespoons garlic salt
1 tablespoon ground ginger
3 tablespoons white pepper
Steps:
1. Place chicken, butter milk, salt and egg into a ziplock bag. Shake well and refrigerate for 12 to 24 hours.
2. Pour chicken and marinade into a large bowl.
3. Preheat oven to 200°C.
4. Put all coating ingredients together in a ziplock bag.
5. Pour in 4 - 5 Tbsp marinade. Mix well.
6. Put a few chicken pieces into a ziplock bag. Shake to coat evenly. Work in batches and avoid putting too many pieces in at one time.
7. Place the chicken onto a rack over a baking pan. Spray them with cooking spray.
8. Bake the chicken for 10 minutes. Then flip. Spray cooking spray, bake for an other 5 - 10 minutes or until golden brown. (If you are not sure if they are cooked through, test them by inserting a cake tester or a wooden stick. If the juice comes out transparent, they are done; if the juice is pink, bake for a few more minutes.)
9. Remove from the oven. Serve with KFC mashed potatoes and gravy or on its own.
Shaking the chicken with coating seasonings in a bag can help to create a lighter layer of coating.
