Since I was making baked KFC chicken, I figured I might as well make their famous side dish to go with!
Ingredients:
Gravy
2 1/2 cup water 1 chicken stock bouillon cube
1 beef stock bouillon cube
60 g unsalted butter
4 tbsp all purpose flour
1/2 tsp garlic powder
a pinch of ground black pepper
Mashed potatoes
2 lbs potatoes (peeled and cut into 1 inch cubes)
50 g unsalted butter
85 g heavy cream
120 ml full fat milk
a pink of salt and ground black pepper
Steps:
Gravy
1. Add water and bouillon cubes in a pot. Bring to a boil.
2. Melt butter in a pan over medium heat. Add flour, garlic powder and pepper. Mix well.
3. Pour the hot liquid in batches. Keep stirring quickly as it thickens.
4. Once it reaches a gravy consistency, it's ready to be served.
Mashed potatoes
1. Put potato cubes in a pot. Add 2/3 tbsp salt and water until all potatoes are covered.
2. Bring water to a boil. Keep boiling the potatoes for around 15 minutes until very soft. Remove from pot and drain well.
3. Melt butter in a pan over medium-high heat. Add cream and milk. Whisk well. Heat until just before simmer. Remove from stove for later use.
4. Mash the boiled potatoes with a masher or fine sieve.
5. Add the warm cream mixture, salt and pepper. Mix well.
6. Pour the gravy on, then serve (with chicken for the best experience!).
The challenging part of this recipe is mashing the potatoes. Working it through a sieve for a super creamy texture is hard, manual work. Never, ever use a blender, because it'll turn gummy. Was it delicious? Yes. Will I make it again? Only when I have a masher.
